Virginia "Carol" Hufendick, 79, of Sutter, Illinois, passed away Sunday, July17, at Pleasant View Lutheran Home in Ottawa, Illinois. She was born on February 5, 1943, in Quincy, Illinois, the daughter of Wilbur and Helen (McPherson) Boekhaus. Carol married Charles “Junior” Hufendick on July 21, 1963 at St. Paul Lutheran Church in Bowen, Illinois. Junior survives in Sutter, Illinois.
In addition to her husband, she is survived by one son, Michael Charles (Debra Lynn) Hufendick of Marseilles, Illinois; a daughter-in-law, Kelly Hunt of Lima, Illinois; one brother, Ken (Labetta) Boekhaus of Villa Rica, Georgia; one sister, Kathy (David) Lantz of Colchester, Illinois; five grandchildren: Michael Charles Hufendick, Jr., Amanda Jean Hufendick, Victoria "Tori" (Benjamin) Calhoun, Daniel Hufendick, and Brandon Hufendick; and three great grandchildren: Olivia, Raelynn, and Cason.
Carol was preceded in death by her parents, a son, Mark Carl Hufendick in 2008, and an infant brother, Fredrick Boekhaus.
Carol graduated from Bowen High School. She met the love of her life, Junior, at the roller-skating rink in Carthage. She was a people person who was always looking for the next opportunity to cook for others. She worked as a chef throughout her life, working at Carl Sandburg College in Carthage, Neiman Foods in Quincy as head chef and caterer, and as executive chef at Curtis Creek Senior Living in Quincy. She was often responsible for feeding large groups of people, even setting up catering for convention centers. Carol and Junior fulfilled a dream by owning and operating The Heritage Room in Quincy for eight years.
Carol was also an avid gardener and made elaborate wedding cakes. She helped her husband on their farm for years in Sutter, often driving the tractors. She was a member of Our Redeemer Lutheran Church in Quincy and Bethany United Church of Christ in Tioga, where she served as Sunday School Teacher.
Visitation will be held Sunday, July 24, 2022, after 3:00 PM with the family meeting friends between 5:00 and 7:00 PM at Triplett Funeral Homes in Mendon, Illinois.
Funeral Service will be held Monday, July 25, 2022, at 10:00 AM at Bethany United Church of Christ in Tioga, Illinois, with Joel Schlatter officiating. Burial will follow immediately at Bethany United Church of Christ Cemetery in Tioga.
Memorials have been established for Bethany United Church of Christ, Tioga, or St. Jude’s Children’s Hospital, 501 S. Jude Place, Memphis, TN 38105.
